Coconut oil is now known to contain a unique form of saturated fat. The saturated fat in coconut is not the type of fat found in meat or other vegetable fats. I have been using this delicious tropical oil for many years. I love its non-greasy feel and skin-softening qualities. An excellent fat for high heat cooking. It's clear, light-tasting, and doesn't smoke like other oils. Use it for stir frying, popcorn, fried potatoes, (they're much healthier). Oh, and frying chicken and fish! Delicious in smoothies, too. It's a light oil and nothing tastes greasy. It's my favorite oil for sure!

There are different types of coconut oil according to the way it is processed. Each has its own unique taste.

The virgin oil tastes a bit like coconut and is the least processed. Some virgin oils are made by "pressing" the oil out of copra, (the dried coconut meat), and some are made by pressing the oil out of the "fresh" coconut meat. I like using this yummy oil in cooking if I want a coconut flavor in the recipe and I also like using it as a medicine, ( I take a tablespoon or two at a time by mouth ), and I use it in my skin care recipes or just put it on plain. My skin "loves" it!

The refined coconut oil is also deoderized and sometimes bleached, (RBD), but it's great for cooking since it has no taste to alter the flavor of foods. I also buy it by the gallon for my soapmaking. If I am making a special soap, then I will use the "virgin", but it's a lot more expensive than the refined oil.

Both types are solid white under 76 degrees F. In temperatures above that, they are liquid and look like water. The oils vary in color from slightly yellow to pure white. I have found the higher quality oils to be "snow white" in color.
